All about Pancakes!

Hey everyone,


So we've just had Valentine's Day and now Pancake Day has been and gone. I absolutely love pancake day and my dad makes the best pancakes hands down. In my house there always has to be some kind of compromise as Duncan likes his pancakes thin and I like them American style. We differ on toppings too. Duncan loves Jam and I'm more of a classics person- good old Lemon and Sugar. My signature pancake recipe can be altered to fit everyone's preferences on thickness of pancake.



My signature pancake recipe:


Ingredients:

150g Plain Flour

3-4 Medium Eggs

50-100ml Milk

2 tbsp Granulated Sugar (optional)


Method:


1. First, start out with your dry ingredients. Sieve the flour into a reasonably deep bowl (a baking mixing bowl works well).

2. In a jug, whisk up the eggs until combined.

3. Make a well in the middle of the flour pile and add the eggs gradually alternating with adding the milk whisking as you go.

4. If the batter is too thick add a little bit more milk. If the batter is too thin add a little more sieved flour.

5. Add the sugar if using, then in a pan add some oil (I use vegetable or sunflower) and add two level spoons of batter (using a ladle) twirling it around until the pan is covered and the batter is evened out.

6. Once the batter has partially cooked on one side, flip over to cook the other side. Each pancake should take about 2 minutes on each side (depending on the thickness).

7. Once cooked, serve immediately with toppings of your choice.
