Cheats Month!

Hi everyone, ever thought you wanted to make something super delicious but didn't have much time? Never fear for cheats month is here! This month we will be posting recipes every week to show you that you can still make great wholesome food within half the time.


For example take my Quick Chocolate Mousse. It only takes about 8 minutes to make and you can even do this with your children. Or how about my quick sausage casserole? The possibilities are endless.


But today we will start with my Quick Chocolate Mousse. This makes a batch of 4.


For this recipe you will need:

Chocolate chips or a bar of chocolate (Add as little or as much as you like- The more you add the richer the mousse, the less you add the creamier the mousse)

200ml-300ml of Double Cream (I used Elmlea Double Cream as the expiry date is longer than supermarket's own brands)

Sprinkles, Marshmallows etc to decorate


Method:

  • Melt the chocolate in a microwave proof bowl (I used a glass bowl) for around 2-3 minutes or until all the chocolate is melted (be careful not to burn it)

  • Meanwhile put the cream into another bowl and hand whisk (trust me it is worth the pain in your arms) just enough to get a bit of air into it (it helps when you mix the chocolate in)

  • When you take the chocolate out of the microwave, let it cool until it is room temperature. Then add the melted chocolate to the cream and whisk together until combined and smooth. Note: If you add the melted chocolate (while it is still hot) to the cream you risk curdling the cream.

  • Once you are happy with the mixture, scoop it either into ramekins or into hot chocolate mugs (like I did) or into whatever you like.

  • Decorate and put them into the fridge to firm up for around 20 minutes.

  • You can make this recipe a day ahead, I would just leave them out for 5-10 minutes at room temperature before you serve.
