Delicious Rocky Road!

Hi all, I'm sorry we've been offline for so long! We've had a marathon few months but late last week I made something that I actually haven't made before as the hubby doesn't like marshmallows. But I wanted a treat for myself and we were visiting friends the next day and as per Irish custom always take something with you and what better than some delicious homemade rocky road.


It is such a super easy recipe and can be done with help from children and refrigerates well so can be kept for longer.


Ingredients:

300g Dark Chocolate (I used Chocolate Chips)

300g Milk Chocolate (I used Chocolate Chips)

Roughly 300g Butter (I used Unsalted Butter with a little margarine as I didn't have enough unsalted butter)

1.5 Packs of Biscoff Biscuits

1 Pack of Digestive Biscuits

2 Packs of x 100g Mini Marshmallows

4 tbsp Golden Syrup


Method:

  1. Melt the butter, chocolate chips and golden syrup in a pan on a low heat until combined

  2. In a bowl roughly crush up the biscuits into chunks

  3. Then add the chocolate mixture to the biscuits, adding the marshmallows thereafter and combine until the chocolate has covered all the biscuits and marshmallows

  4. Line a tray bake tin with greaseproof paper or parchment paper and add the mixture into the tin smoothing out to the edges. The rocky road should be about 2-4 cm thick (a bit chunky) (see picture below)

  5. Place the tin into the fridge to refrigerate for 6hrs (ideally overnight) and once the mixture has firmed up. Remove from the tin and cut into medium sized pieces

  6. The rocky road can be kept in an airtight container for up to a week or two (but it doesn't last that long in my house- I love it too much!)
