Has summer come or is it just a brief stopover?

Hi everyone,


So the sun has once again descended upon us and since we had the wash out that was the first May Bank Holiday (I managed to just about escape unscathed....) maybe it's time to quickly get out the BBQ, have friends and family over and enjoy the sun whilst it lasts.


One of our signature recipes for summer is our chicken kebabs. With this recipe you can pretty much add anything you like and these kebabs can be cooked on the grill or the BBQ.


Ingredients:

For the Kebabs:

2 packs of Diced Chicken Breast

2-3 Bell Peppers

One block of Halloumi Cheese

For the Marinade:

2 tsp Mixed Herbs

10ml Oil

3 tsp Cajun Seasoning (any spicy seasoning will work)

1 tsp Chilli Flakes (optional)


Method:

  1. In a bowl, make the marinade by combining the oil, herbs, seasoning and chilli flakes (if using) and add the diced chicken stirring to ensure all the chicken is covered in the marinade

  2. Chop the peppers into big chunks and thinly slice the halloumi.

  3. Using metal or wooden skewers start to build your kebabs alternating between the chicken, peppers and Halloumi

  4. Lightly grill or BBQ alternating each side to make sure all the ingredients are cooked evenly. Enjoy!
