Pancake Day

Hi everyone,

So tomorrow is pancake day and who doesn't love pancakes! I love mine drizzled with maple syrup and bacon whilst my lovely husband loves his with jam. You can have savoury or sweet pancakes and the combinations you can have are an endless list of pure joy. I prefer to make my pancakes American style in terms of thickness but I sometimes use buttermilk as well. It really depends on my mood.

My husband doesn't like thick pancakes so I tend to make ours on pancake day in the middle between thick and thin pancakes. I also love ham and cheese in pancakes. I have to say that my dad makes the best pancakes. He taught me how to make them when I was a kid. My dad has many a talent- he even inspired how I've decorated my flat.

The only thing that doesn't appeal to me with pancakes is peanut butter or any form of nuts on them. It really spoils the consistency for me. I'm not only allergic to nuts and peanuts, I absolutely cannot stand them. They have an acquired taste to them- kind of like Marmite- you either love them or hate them.

For a sweet pancake, I like chocolate and whipped cream. I used to like lemon and sugar but lemon has become too sour for me. Also pancakes are not just for pancake day- you can make them all year round. Just don't be like me and mess around with the consistency when it comes to the batter. I was making my usual recipe for Buttermilk Pancakes in late Feb and total disaster!! I'm very lucky to have an understanding husband who wasn't upset or anything with me- he really does support me and brags about my recipes to his colleagues at work.

So I think to play safe he can make the pancakes this year- he's an expert flipper too!
