
Quick Speedy Veggie Pasta

Last night my lovely husband cooked. A basic yet classic staple- veggie pasta. Don't knock it until you try it. It is ever so simple to make, doesn't take long nor requires effort. A scrumptious and hearty meal..
Ingredients:
Pasta (We used Penne)
Bell Peppers (We used a Red Bell Pepper)
Peas (Frozen are just as good!)
Cheese (We used Cheddar)
Method:
1. Heat a pan of water until almost boiling.
2. Then add a pinch of Salt and the pasta, cooking until al-dente.
3. Meanwhile in another pan cook the peppers (being careful to not make them too soft.)
4. Heat up the peas for 5 minutes either in another pan or in the microwave (mini tip there!)
5. Once the pasta is cooked, drain and add back to the pan.
6. Add the cooked peppers and peas tossing in with the pasta to combine.
7. Dish up in pasta bowls or equivalent and add a sprinkling of cheese on top to finish.
Tips:
•You can microwave peas to be a bit quicker on time by putting them into a heatproof bowl with water and heating them for 5 minutes.
•You can make a sauce too using a jar of pasta sauce or using chopped tomatoes adding herbs for a bit of flavour.
•You can use any form of pasta shape
•If you find you have made too much pasta, don't worry as you can always have the leftovers for lunch or dinner the next day.
