Hi everyone,
I'm so sorry our recipe calendar has slipped our mind!! But I'm only a few days out so i hope you'll forgive me.
So here goes, a lovely autumnal soup that's quick and easy to make, makes a great starter for a lunch or dinner that you're hosting, but is equally a home comfort when you come home from work not sure of what to make of the British weather at the moment.
Carrot & Coriander Soup:
Ingredients:
500g-1kg Carrots (Peeled & Chopped)
250ml-300ml Double Cream
3tsp Coriander
2tsp Mixed Herbs
100ml Milk
Pinch of Salt
Method:
Peel and chop the carrots and add to a pan of boiling water, cooking until soft.
In a mini chopper/blender/food processor, blitz the carrots until you have a smooth purée. Alternatively you can use a potato masher.
Add the puréed carrots to a pan adding the herbs, coriander, pinch of salt and double cream stirring together on a low heat until combined.
Add some milk if the consistency is too thick and simmer the soup until you have a smooth yet slightly thick consistency.
Serve immediately with some bread (I used Irish Soda Bread) and a sprinkle of fresh coriander on top.
