So we missed a whole two months! Dec 2023 was a mad month- we were in such a rush to finish our Christmas shopping and I had a dreadful cold for about a week or so! In January 2024 I took some well deserved time off which I spent at home with Netflix and lots of duvet & PJ days.
But the one thing I managed to do (although lovingly time consuming) was make recipe calendars for the ladies in my bible study group and I realised that not all the recipes have been put up on the blog yet. So each month of this year, I will be sharing our signature recipes so you can have a go at them at home.
January
Quick Speedy Veggie Pasta
Ingredients:
500g-1kg Pasta (We used Penne)
1-3 Bell Peppers (We used 1 for 2 people)
150g-300g Peas (Frozen are just as good)
200g Cheese (We used Cheddar)
Method:
Heat a pan of water until almost boiling.
Then add a pinch of salt and add the pasta, cooking until al-dente.
Meanwhile in another pan, cook the peppers (being careful to not make them too soft).
Heat up the peas for 5 minutes in another pan or in the microwave (mini tip there!)
Once the pasta is cooked, drain and add back to the pan.
Add the cooked peppers and peas tossing in with the pasta to combine.
Dish up in pasta bowls or equivalent and add a sprinkling of cheese on top to finish.
Tips:
You can microwave peas to be a bit quicker on time by putting them into a heatproof bowl with water and heating them for 5 minutes.
You can make a sauce too using a jar of pasta sauce or using chopped tomatoes adding herbs for a bit of flavour.
You can use any form of pasta shape.
If you find you've made too much pasta, don't worry as you can always have the leftovers for lunch or dinner the next day.
