Roast Potatoes & Hasselback Potatoes

Hi everyone,
On a Sunday afternoon, it is so nice to have a roast dinner with either friends or family for company or even just the two of you. The smell alone from the kitchen is tempting. But how do we achieve the most delicious roast potatoes? My husband Duncan makes them one way and I make them another. Both are equally delicious but the best person who makes roast potatoes title belongs to my dad. My lovely dad. With his recipe, you can never fail to make good roasties!
Ingredients:
Maris Pipers (they come out nice and fluffy)
Pinch of Salt
Rosemary/Thyme (optional)
Method:
1. Peel, chop and boil the potatoes until the water starts boiling. Add a pinch of salt to taste.
2. Drain the potatoes completely ensuring there is no excess moisture.
3. Grease some kitchen foil on a tray, and spread the potatoes evenly on the tray.
4. Sprinkle the rosemary/thyme (if using) over the potatoes
5. Cook the potatoes on Gas Mark 7 until they're golden brown turning over halfway to ensure they are cooked all over.
6. Serve immediately.
