Hello everyone,
For some reason, I lost what I originally wrote so I'm very sorry for those who have clicked on this link and found nothing written. I don't know what happened.
So a few weeks ago I found myself with an abundance of eggs in the fridge that needed using up and instead of making Eggy Bread (which is a firm favourite in my house), I decided to make some Rustic French Toast (an equally yummy recipe).
Ingredients (for 1 person):
2 Medium Eggs
2 teaspoons of Cinnamon (You can add more if you like to taste)
2 teaspoons of Nutmeg (You can add more if you like to taste)
2-3 teaspoons of Sugar (You can add more if you like to taste)
A few slices of Bread (You can use white, 50/50, crusty bread etc.)
Oil
Method:
In a deep dish (I usually use my pasta bake/toad in the hole deep dish) add the eggs, cinnamon, nutmeg and sugar and mix until combined.
In a pan heat the oil on a medium heat (too high a heat and it will burn, too low a heat and the eggs won't cook properly).
Coat a slice of bread in the mixture and cook in the pan a minute each side. I managed to fit 2 slices in my pan each time.
If it becomes crispy don't worry (that's the rustic part)- see picture below.
Serve immediately and enjoy. You can serve it with whipped cream or ice cream. I didn't have either in so enjoyed it on its own.
