Scrumptious Feta Salad!

Hi everyone,
With summer fast approaching, I'm sure you want some lighter options for food. Recently my husband Duncan and I had a small Greek Food evening where I prepared a few yummy things for us to try. One of the things I included was this recipe for a Feta cheese salad. I found that keeping it simple really helped to not overwhelm the other dishes I had made.
So for this simple yet scrumptious salad you will need:
200g Feta Cheese (cut into blocks or crumbled)
250g Cherry Tomatoes (they can be any tomatoes off the fresh veg aisle)
60g Rocket (can be fresh from your garden or a bag from the supermarket)
A drizzle of Olive Oil
Making the salad:
Cut the Feta Cheese into blocks or crumble the feta cheese and then place in a bowl.
Cut the Cherry Tomatoes into quarters and add to the feta cheese.
Add the rocket in (minus the stalks) and drizzle over some olive oil.
Give the salad a little stir and serve immediately.
Note: You can make the salad a day ahead and keep it in a sealed container in the fridge overnight. Also you can add anything to the salad or remove anything listed above in the salad. It all comes down to what you like and your imagination.
