Hi everyone,
So on Sunday 5th March, Duncan and I were at our church band social. Pizza, conversation, fellowship and more- what's not to like and as usual I can be counted on to bring dessert!
So aside from bringing some chocolate biscuits and Jam Mallows (an Irish favourite), I made the simplest cake on the planet. Perfect for baking with the children. So simple it doesn't require baking....
Chocolate & Ginger Fridge Cake:
Ingredients:
250g Roughly Chopped Ginger Nut Biscuits
375g Milk Chocolate
300g Unsalted Butter
3 tbsp Golden Syrup
200g Sultanas (optional)
Method:
1. Prepare a deep baking dish, greasing it with a little oil and lining it baking paper.
2. In 2 heat proof bowls melt the butter and the chocolate until smooth.
3. Combine together in a bowl with the golden syrup and set aside.
4. Meanwhile crush the ginger nuts in a bowl (deep enough to hold the mixture) and add the combined butter, chocolate and golden syrup until you have a smooth consistency.
5. Then add the sultanas (if using), combining all together and add to the prepared tin smoothing the mixture to all the edges.
6. Leave in the fridge to set ideally overnight but 3-4 hours is equally okay.
This recipe can be mixed up too. Add Marshmallows, Cherries- the skies the limit. Let me know what creative creations you come up with.
Enjoy!
