We finally made Pancakes!!!

Hi everyone,
We finally made pancakes last night after a marathon week of work, hospital trips etc. I started making them as my lovely husband was sorting out an issue with our bathroom (I won't say any more don't worry!) But for some reason, they didn't quite work well. I had the mixture right in terms of consistency and correct measurements of ingredients so it was a matter of how they cooked in the pan. Our gas oven top and electric oven are very unpredictable and can cause a lot of problems. These appliances were the 'bright idea' of the previous owners who weren't exactly experienced in electrics or exterior/interior design. But hey ho, we roll with it (laughs)!
Anyway my husband lovingly rescues the situation and manages to get 2 pancakes for us each out of the remaining batter (what a relief- I couldn't miss having pancakes!)
And they were delicious! I put in some Chocolate Chips and folded my pancakes over like a Calzone. My hubby had Jam in his. Can't beat chocolate or jam with pancakes.
Earlier last week you sent us some of your favorite toppings for pancakes and they sounded so yummy!
We had suggestions of having pancakes thin like a Crêpe with lemon and sugar on ir having lemon or maple syrup on pancakes. Our question also prompted my husband to pick up jam for his pancakes (which in the end I did as he forgot!) He had been working really hard all week for the last 3-4 weeks so I didn't mind picking up the jam at all.
But one thing I find that no chef/baker etc talks about as such is errors that can happen with pancakes and how to resolve them.
So this is where I come in given my recent experience (laughs).
Pancake batter is too thick- add more milk to the batter and whisk until the consistency is a bit smoother.
Pancake batter is too thin- add a little sieved flour and whisk into the batter until the consistency is a bit thicker.
Lumps?- whisk the batter whilst adding a little milk and the lumps should dissolve. Alternatively you can scoop the lumps out with a spoon.
Pancakes aren't cooking- the pan is probably not hot enough. Preheating the pan for close to a minute before adding a spoonful or two of batter helps with the cooking process.
Pancakes are stuck in the pan- there isn't enough oil or butter in the pan. The pancake should be able to freely move within a few moments after the batter hits the pan.
Pancakes aren't evenly cooked- there's too much batter in the pan. 1-2 ladle spoonfuls is enough. My husband does 1 and a half and I do two level ladle spoonfuls.
These are just a few common things that could go wrong with pancakes. But practice makes perfect.
I'm still learning so don't worry!
As long as you don't set off the fire alarm you're okay.
